Makes: 8 burrito bowls

INGREDIENTS:
3lb Jennie-O lean ground turkey
Pam cooking spray
chopped onions and garlic
garlic powder and taco seasoning of choice
1 can black beans
1 can steam crisp mexi-corn
1 can (4oz) diced green chiles
1 can (4oz) sliced black olives
2 whole bell peppers (200g)
5 cups white or Jasmine rice
STEP 1:
In a large pan, saute garlic and onions in Pam cooking spray until steamed. Add ground turkey and seasoning.
STEP 2:
Brown the ground turkey until thoroughly cooked. Drain excess oil in a strainer and return the ground turkey into pan.
STEP 3:
Add rice, green chiles, black beans, olives, mexicorn, and bell peppers.
STEP 4:
Stir until evenly mixed.
STEP 5:
Portion out evenly into 8 Tupperware containers, and enjoy 8 days' worth of healthy, prepped burrito bowls!
